Health Protein French Toast!

Remember when everyone was making protein pancakes…. oh wait, they still are! Well, I’ve tried my fair share of protein pancakes and for some reason they never turn out as they should… which results in panic in the kitchen {not to be confused with panic at the disco :P}.

I decided to test out protein French toast and I’m glad I did! They’re much easier to make, less messy and super delicious. This French toast recipe is packed with protein & I enjoy mine with a protein drink or with fresh juice (like the cold fighting juice here) for more fuel. This is the perfect meal before or after a heavy active session such as cardio or hot yoga.

Here’s what you need:
• Whole wheat bread (I use 2 slices of Eureka! whole wheat bread that has 9g of protein per a slice)
• Egg whites (3 eggs or so)
• Fruit of choice (1/4 of a cup)
• Vanilla (just a teaspoon)
• Dash of cinnamon
• Dash of stevia
• Sugar-free maple syrup (I used Walden Farms pancake syrup)

Here’s what you do:
• Coat the bottom of a bowl with egg whites and add 1 teaspoon of vanilla, a dash of cinnamon and 1 teaspoon of stevia. Mix together. (I used about 1/4 of egg whites for 3 small slices of bread).
• Dip the bread in the mixture and make sure the bread absorbs a good amount of mixture.
• Add the bread to a pre-heated pan at medium temperature (make sure you add coconut oil to the pan before adding the bread).
• Rotate the bread and make sure it’s cooked through. You’ll know when it’s done when the bread pieces sort of ‘puff up’.
• Add to plate with your fruit of choice and drizzle syrup on top!
