Zucchini Fry Recipe

Zucchini is a wonderful summer squash that is packed with great nutrients. If you haven’t tried zucchini, I recommend you do with this recipe. Zucchini is packed with manganese {cough, cough – this gives you energy!}, vitamin C, fiber and so much more.

I first fell in love with zucchini when I was working as a server in college. The restaurant that I worked at served fried zucchini chips with an amazing creamy dipping sauce. If you’re wondering if it was healthy…. it was not. BUT, I loved the taste of the zucchini. So, one evening {many years past college} I decided to make a healthier version of zucchini fries. Ta-da, my zucchini fry recipe created.

I love this recipe because it’s super simple and quick. Oh, and my BF loves them. I feel like if my BF likes my kale recipe and this zucchini fry recipe, I’m doing something right {lol}

Trim with Jenn’s Zucchini Fry Recipe:
1 zucchini
Egg whites
Breadcrumbs (I used Italian breadcrumbs)
Parmesan cheese (optional)
Sauce of choice (I’ve used Greek yogurt and cilantro salad dressing)

Here’s how you do it:
Slice zucchini in fry like shape, coat in egg whites (I just coated a bottom of a Tupperware) then coat in breadcrumbs (again, just coated the bottom of a Tupperware). Bake at 350 for 10-15 min and then add parmesan cheese. Dip in your sauce of choice.
